These lightly battered chicken bites are coated in a simple mixture of egg, paprika, onion powder and flour – then baked in the oven for a light, delicious alternative to processed chicken bites!
I tend to make these chicken bites for my toddler and serve them with a mixture of meals across the week – they’re great alongside a crunchy salad and his favourite tomato & pepper rice, with chips and beans, tossed in a sauce like sweet and sour, or taken on a picnic and used as picky food!
They’re easy to make with minimal ingredients you likely have in the kitchen right now. You can switch it up by changing the spices in the coating too – for example, swapping the paprika for basil, depending on your families tastes.
As always, these freeze and defrost easily, so are great for forward prepping meals, or, the portion below makes enough for a few meals for my toddler – or, a lunch for the both of us to enjoy.
Lightly battered chicken bites
These lightly battered chicken bites are quick and easy to make, with chicken breast and seasoning, then baked in the oven for a family favourite meal!
Ingredients
- 1 chicken breast
- 5 tbsp plain flour
- 1 tbsp paprika
- 1 tsp onion granules
- Oil - for the baking tray
Instructions
- Preheat your oven to 200C
- Begin by cutting the chicken into bitesized pieces, then place into a bowl
- In another bowl, mix together the flour, paprika and onion powder
- Then, in another bowl, crack an egg and stir with a fork until uniform in colour
- Start to batter the chicken - but putting the pieces into the bowl of flour and seasoning mixture - toss with a spoon, or your hands, until the chicken in lightly floured - then set aside
- Next, transfer the floured chicken into the egg mixture (you may need to do this in smaller batches) - until the chicken is sticky with egg mix
- Finally, transfer the eggy chicken pieces back into the bowl of seasoned flour (use a fork to bring over a minimal amount of egg from the bowl)
- Toss to fully coat the chicken in the flour mixture
- Then, lightly oil a baking tray (with a spray oil if you have one - else, a light amount of oil)
- Place the battered chicken onto the baking tray and cook for 12 minutes (or until the chicken is cooked (white throughout) and batter as crisp as you'd like
- Once cooked serve with your favourite sides and dip
