Our toddler LOVES peanut butter – so this was a dish we created so he can enjoy it beyond the usual breakfast topper! This quick satay chicken curry takes under 20 minutes to make, and is made of lean chicken breast, peanut butter and coconut milk.

Satay Chicken Curry for Kids
Satay chicken curry - a mild, creamy peanut and coconut sauce and lean chicken breast! Best served with rice!

Ingredients
- 1 chicken breast
- 2 tbsp smooth peanut butter
- 50ml coconut milk
- 50ml water
- 1/2 tsp curry powder
- 1 tsp sugar
Instructions
- Begin by cutting the chicken breast into bite sized pieces
- Then, heat oil in a non-stick saucepan
- Add the chicken breast and curry powder into the pan - stir to coat the chicken with the curry powder then cook for around 5 minutes on low - until the chicken is lightly browning
- Then, add in the peanut butter, coconut milk and water - stir to form a sauce (depending on the brand of peanut butter, you may need to add in more water, as some are very thick..)
- Bring the mixture to simmer and cook until the chicken is cooked and white thoguhout
- Serve and enjoy!
Notes
