Pancake Bites

These pancake bites are both very easy to make, and very delicious to eat! I make these for my son a couple of times a month – and he loves them! They’re the perfect size for finger food which he can grab and enjoy himself, and them being smaller than traditional pancakes – it makes cooking them much quicker and easier, too!

These bitesized pancakes are so handy to have in! They're quick to make and can be eaten alone or alongside yogurt and fruit!

Prep Time 3 minutes
Cook Time 6 minutes
Total Time 6 minutes

Ingredients

  • 70g plain flour
  • 100ml whole milk
  • 1 egg

To fry:

  • tbsp butter

Instructions

  1. Mix together the pancake ingredients (everything except for butter) until smooth
  2. Then, heat a small amount butter in a non-stick pan (enough to coat the base of the pan) and turn the pan to medium heat
  3. And, add the pancake mixture a tablespoon at a time - one tablespoon of mixture is a single pancake bite - you may need to do this in batches (i did 3x batches of 7)
  4. Cook the pancakes on one side for around 1 minute, or, until they begin to firm up a little
  5. Then flip! and cook the other side
  6. Once both sides are cooked - remove from the pan - continue with the next batch, then, they're ready to enjoy!

Notes

You may need to add more butter between batches if the pan is sticking
