Savoury rice for kids

Savoury rice was one of the first things my son really enjoyed eating. He’d been quite fussy from the point of weaning so when we discovered he loved rice – I used it as a method to get him trying tons of new flavours and ingredients.

This is one we make often for the whole household – the recipe below makes enough for the whole family to enjoy for dinner, or you can freeze it in smaller portions to make mealtimes for the kids easier (just pop it in the microwave from frozen for a quick side to most things!).

This toddler friendly tomato and pepper rice recipe had a mild, savoury flavour which pairs well with chicken, sausages, veggie fingers… honestly, most stuff! You can add your kids favourite veggies in too – I sometimes switch up the sweetcorn for peas.

Savoury Rice

A deliciously versatile savoury rice which our toddler, and whole family loves. Made with diced onion, peppers, corn and tomato puree for a mild, savoury flavour which pairs with most meals.

Prep Time 4 minutes
Cook Time 12 minutes
Total Time 16 minutes

Ingredients

  • 1 tbsp oil or butter
  • 1/2 onion
  • 1/2 bell pepper (any colour)
  • 50g sweetcorn (or peas)
  • 150g short grain easy cook rice
  • 300g water

Spices:

  • 1 tsp tomato puree
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1 tsp paprika

Instructions

  1. Begin by dicing the pepper and onion
  2. Then, heat your butter or oil in a saucepan, and add the diced pepper and onion
  3. Fry for around minutes; stirring sporadically - until the onions have softened and turned slighly golden on the edges
  4. Then, add in the spices and tomato puree - stir and cook for a minute
  5. Then add in the rice, sweetcorn or peas, and water
  6. Bring mixture to boil, then immediately turn the heat down and put the lid on the pan
  7. Cook for the time indicated on the packet of rice (for me, this was 11 minutes)
  8. Then remove the lid - turn off the heat and stir - the liquid should be absorbed and rice cooked
  9. Once cooked, stir and serve - or store in the fridge/freezer for mealtime

Notes

If you're freezing the rice for future meals - simply put a single portion in a freezer safe, airtight container/bag once the rice has completely cooled. To cook, simply pop in a microwave safe bowl and heat for 2-3 minutes depending on the temperature of your microwave.
